Super Bowl Sunday

Are you ready for some football? Looks like the underdogs aka Saints won!

I have found a delicious chili con queso dip that was perfect for the Super Bowl. But first let me share some excitement. I have been blessed to win four giveaways in the month of January! I believe after our 12 days of giving, God is blessing us abundantly. One of the giveaways I won was perfect for tonight.


A ceramic football platter, plates, napkins, green chile's, and a runner...see perfect for tonight.




Our spread: baked potato bar, chili con queso dip, chicken taquitos, chips and crackers.




Now for the must try recipe that was found here. This is not just an ordinary Ro-tel cheese dip. This is kicked up a notch or two! Great for parties and game night. It could undo all that exercising did for you if your not careful!


Ingredients:

1 package Velveeta
1 can Ro-tel tomatoes & chilies
1 medium onion
about 5 oz bacon
1/2 a bell pepper
1 garlic clove
1/4 to 1/2 a tsp ground cumin
1/2 a tsp oregano
Worcestershire sauce
parsley

First, finely chopped a small, juicy red bell pepper, a small onion, and grate a fairly big garlic clove.

Second, cook the bacon until brown and crispy and don’t even think about cleaning the pan. Just don’t! Drain the bacon on a paper towel.

Third, cook the veggies in the bacon grease, over low heat, until they’re soft. That’ll add a wicked flavor. Add 1/4 to 1/2 a tsp ground cumin, cook for 30 more seconds and then pour in the Ro-tel. Also add a slightly heaping 1/2 a tsp dried oregano. Another thing I’ve added was a splash of Worcestershire sauce–it really boosted the flavors! Simmer for a few moments.

Next, cube the velveeta, or learn the art of delegating! Add the velveeta and melt it over low heat. Stir occasionally.

Finally, crumble the bacon and add it to the dip . Throw some parsley on top and that's it! Serve hot and keep it hot!


My favorite part...adding the crumbled bacon....yummmmy!

I promise it looks better in person and tastes scrumptious. Oh, and it makes a lot. I have a batch in my freezer now. Enjoy!

4th of July Fun!

Traditionally ever 4Th of July we spend time with my In-laws. Usually it is spent on the river. This year they took a trip to Minnesota to see their grand-daughter get married and to spend time with their daughter and her family! Congrats on your upcoming wedding Cynthia!

This 4Th of July we went to my good friend Tammy's house. Tammy is an amazing person. She is so talented in so many areas. I've tried to convince her to open an Etsy shop because she is so crafty, or at least start blogging...no such luck yet! Tammy also throws amazing parties! We had a blast playing cards, horseshoes, eating lots of DELICIOUS food, swimming, and watching fireworks. Unfortunately, I was having too much fun to remember to go get my camera! I cannot believe I forgot to take pictures!


I did however take a few photos before we left home!

A fruit pizza I made to take to my friends party. I also took a veggie tray, dip, and our snow cone maker with lots of flavors, and some fireworks.

I am so blessed to have Tammy in my life! I adore you and your great family!

Funny Friday...Boys Will Be Boys!

Back a while ago I was visiting Carrie at Carrie's Little World. She had posted on how she makes a summer fun list of things the family wants to do over the summer. I loved the idea and used it as inspiration for a family night project of coming up with our own list. Everyone thought of five things to do that was frugal or that did not cost any money. Here is our list. It seems to keep growing!


I wasn't planning on showing this chalkboard again until I had completed the transformation....but as I was looking at our list I noticed a new addition had been added today!



Do you see it? Yes this was added by my soon to be 8 year old....Cameron! Just in case you don't see it...here it is all blown up! Pun not intended!

Hmmm already checked....how come I wasn't invited? This is suppose to be family activities Cameron! Oh yeah, blondes don't 'poot'. Thanks for NOT inviting me in on this one!

XCLR8...GPS Program/ Prom update

Last night I got to see my boys hard work pay off. They have been practicing for months for their XCLR 8 (choir) program at church, and both my boys got to sing last night. They did AWESOME! It was the best Cameron has ever done. He was part of the GPS program. (God's Plan of Salvation) It was adorable! He even smiled a lot! I love it when my boys sing at church. I doesn't get any better than that. You made mom and dad so proud!
Grandma got to come and see them shine on stage too. Thanks Grandma!

As Wednesday night XCLR8 comes to an end.... both of my boys have there first baseball game tonight. Unfortunately at the same time, different fields! Baseball 3 nights a week, garden going in this week....busy time!

Friday Family Night / Saturday Plans

Today, I wanted to get a lot done at home. I cannot believe that even though all the Christmas things are down (and have been for weeks) they are still in boxes in the dining room waiting on me to organize, fix some ornaments, and then get them back to their own little Christmas storage room. Ugh! That is my Saturday project!! No more procrastinating. Sometimes, I am a procrastinating queen.
A big after Christmas mess!


Since I knew tomorrow would be filled with Cameron's second Upward basketball game from 10:00-11:30, organizing the Christmas decor, and getting everything ready for Sunday church would take up the most of the day.... I wanted to clean the house today. I know a SHOCK to some! Me...actually in the "cleaning mood". Do you ever get in the "cleaning mood"?

I told Caden I wanted him to be mommas big helper today, and boy did he step up to the plate. I was so proud of him! He cleaned the living room mostly by himself! He was also so good today!! He was very loving, I think he missed not being around me much since I had the pink eye earlier this week. He also said, "yes ma'am" all day and told me how much he loved me all day too! It just made Mommy be on cloud nine!

I told Caden I thought we needed a Friday Family Night. He was all for it! "Yeah mom, can we have a movie night with popcorn?" He was so excited he picked out the movie and set out our popcorn maker and kernels. (In the morning.) Poor little guy had been wanting popcorn yesterday too. He even took a 2 hour nap so he could stay up past his bedtime. He never does that anymore!

We had a really great Family Night. We watched 'Ratatouille' and had our popcorn. The boys snuggled up to us on the couch. Sometimes, we forget how much the boys really enjoy us there beside them during a movie. We laugh together and have a good time. Loved it!
